For our 5th pop up dinner, we are super excited to present the cuisine of Gujarat, in western India. Gujarati cuisine is recognized as the the most extensive vegetarian cuisine in the world, owing to the fact that it has evolved over many centuries in a culture where a staggering 60% of the population is vegetarian.  This rich and varied vegetarian cuisine is what I grew up with and I still see it as my culinary touchstone. Over the past several years, over the summer months, when my mom visited me, we delighted in transforming the farmers market bounty into delicious Gujarati dishes, both traditional and experimental. When we would have Rohan over for dinner, my mom would always fuss about making sure that there was something "non-veg" for him to eat, always assuming that Rohan would not care for her 'veg' food, even though Rohan loved it and always told her so.

So, this one is dedicated to the memory of my dear mummy and Rohan's dear dadi.  We hope you will join us.

The Menu (subject to minor changes): 

  • A bubbly drink served with some tasty munchies
  • Khaman Dhokla, steamed sweet-tangy, spongy cakes made from chick-pea floor, yogurt and spices, topped with fresh grated coconut, cilantro, green chilies, mustard seeds and curry leaves, served with tamarid and green chutneys. There is probably no other dish hat showcases "Gujarati food" like Khaman Dhokla.
  • Pudla, golden chick-pea floor pancacke with summer tomatoes, cilantro and green onions
  • Undhiyu, the quintessential Gujarati main event, a medley of fresh vegetables and fresh pigeon peas and dumlings made with chick-pea floor and fenugreek leaves, cooked with Gujarati spices, fresh grated coconut, cilantro, garlic chives, and more. 
  • Kachumber,  Gujarati chopped salad.
  • Khichadi, basmati rice and moong dal cooked simply, topped with ghee and toasted cumin seeds, served with Karhi.
  • Karhi, buttermilk soup spiced with ginger, green chilies, fenugreek seeds and cilantro, another Gujarati must-have.
  • Shrikhand,  a sublime dessert made from yogurt cheese, saffron, pistachios and cardamom.
